TSN KOREA | Giunchan Co., Ltd. (CEO Park Jong-Rye), a Korean bio-material company, announced that it has completed a human clinical trial on the functional efficacy of 'GMK® Extract,' a proprietary cultured mixed mushroom mycelia extract, and has submitted an application to the Ministry of Food and Drug Safety (MFDS) for individually recognized functional ingredient status based on the results.
Giunchan markets it under its own brand name, 'GMK Extract.'
The trial, supported by a national research project, was jointly conducted by Gimcheon Medical Center and Korea University Guro Hospital. It involved 175 adults aged 55 and older reporting subjective cognitive decline, and was carried out over 16 weeks using a randomized, double-blind, placebo-controlled design. The trial ran from the enrollment of the first participant on April 10, 2025, to the completion of the last participant on January 21, 2026.
The trial's primary efficacy endpoint was the K-MMSE (Korean version of the Mini-Mental State Examination), an internationally recognized cognitive assessment tool. At week 16, participants who took GMK Extract showed a statistically significant improvement compared to the placebo group (p<0.05), a result that was consistent in the per-protocol analysis.
The company's preclinical research supporting a possible mechanism of action — related to oxidative-stress pathways and neuronal protection — has been published in SCI-indexed journals, including Current Issues in Molecular Biology and Cells.
Giunchan holds three domestic patents (No. 10-2557645, No. 10-2575704, and No. 10-2844900) covering compositions and manufacturing methods based on its complex mushroom mycelia extract and enzyme-treated material, reflecting the company's long-standing proprietary research underlying this trial. Patent registration reflects recognition of novelty and inventive step, and is separate from MFDS review of functional food labeling claims.
Giunchan also completed multiple safety studies, including repeated-dose and genotoxicity tests, through the GLP Center at Daegu Catholic University. No serious adverse events were reported during the 16-week trial.
The MFDS application is currently under review, and the ingredient may not be labeled or advertised as a recognized health functional food ingredient until final approval is granted.

Building on this trial, Giunchan plans to prepare a supply of GMK®-based care foods and health functional food ingredients, while expanding its portfolio of functional food materials and healthcare products based on its mixed mushroom mycelia technology.
Giunchan is developing GMK® not merely as a single ingredient, but as a broader bio-material platform built on its proprietary mixed-culture fermentation technology for mushroom mycelia. Building on this platform, the company plans to pursue follow-up research and clinical trials across a range of health areas beyond cognitive function, as well as next-generation mycelia materials using new grain-based media and culture conditions.
Unlike conventional crops that require large areas of farmland and long cultivation cycles, mushroom mycelia can be produced within a relatively short cycle in a controlled environment using grain-based media, requiring comparatively fewer resource inputs — a characteristic the company points to as supporting its potential as a sustainable bio-material.
Based on these characteristics, Giunchan aims to apply GMK® and its mixed mushroom mycelia technology to next-generation food materials that reflect ESG and sustainability principles, positioning itself as a leader in eco-conscious food development as it enters the health functional food ingredient market. The company also plans to expand its business beyond Korea into the global functional-material market, leveraging its accumulated biotech capabilities.

고령화가 빠르게 진행되면서 인지 건강에 대한 관심이 커지는 가운데, 국내 바이오 신소재 전문기업 (주)기운찬(대표 박종례)이 독자 개발한 복합버섯균사체 배양추출물에 대해 식품기능성 인체적용시험을 완료하고, 그 결과를 근거로 식품의약품안전처에 개별인정형 건강기능식품 원료 등록을 신청했다고 밝혔다.

국가연구과제 지원 임상, 55세 이상 성인 대상 16주간 진행
이번 인체적용시험은 국가연구과제의 지원을 받아 김천의료원과 고려대학교 구로병원이 공동으로 수행했다. 만 55세 이상 인지기능 저하를 호소하는 성인을 대상으로 16주간 무작위배정, 이중맹검, 위약대조 방식으로 설계되어 데이터의 신뢰성을 확보했다는 평가다. 시험은 2025년 4월 10일 첫 시험대상자 등록을 시작으로 2026년 1월 21일 마지막 시험대상자 완료까지 진행됐다.
1차 유효성 평가지표 K-MMSE에서 유의미한 개선 확인
이번 시험의 1차 유효성 평가지표는 국제적으로 통용되는 인지기능 평가도구인 K-MMSE(한국어판 간이정신상태검사) 총점이었다. 16주 시점 분석 결과 'GMK 추출물' 섭취군은 위약군 대비 통계적으로 유의미한 개선 효과를 보였다(p<0.05). 이러한 경향은 최대분석대상군(Per-Protocol) 분석에서도 동일하게 확인됐다. 회사 측은 "이번 결과는 노년기 인지 건강 관리를 위한 식품 소재로서의 가능성을 인체 시험을 통해 확인했다는 데 의미가 있다"고 설명했다.
SCI급 국제 학술지 게재 전임상 연구로 작용 가능성 뒷받침
기운찬 연구진은 관련 전임상 연구 결과를 국제 학술지(Current Issues in Molecular Biology, Cells 등)에 발표한 바 있다. 해당 연구들은 복합버섯균사체 배양추출물이 산화적 스트레스 관련 경로 및 신경세포 보호 기전과 연관될 수 있음을 시사하는 기초 자료로, 이번 인체적용시험 결과와 함께 작용 가능성을 뒷받침하는 근거로 제시되고 있다.
인지 건강 관련 국내 특허 3건 보유… 원천기술 경쟁력 확보
기운찬은 복합버섯균사체를 활용한 인지 건강 관련 조성물 및 제조방법에 대해 국내 특허 3건(제10-2557645호, 제10-2575704호, 제10-2844900호)을 등록했다. 각 특허는 복합버섯균사체 추출물·효소처리물의 조성물 구성 및 이를 활용한 음료 제조방법 등을 대상으로 하며, 회사 측은 오랜 기간 축적한 원천기술을 바탕으로 이번 인체적용시험까지 이어졌다고 설명했다. 다만 특허 등록은 발명의 신규성·진보성을 인정받은 것으로, 식품의 기능성 표시·광고를 위한 식약처의 별도 심사·인정과는 구분된다.
안전성 검증도 병행… 이상반응 보고 없어
기운찬은 대구가톨릭대학교 GLP센터를 통해 반복투여독성시험, 유전독성시험 등 다수의 안전성 시험을 완료했으며, 이번 16주 인체적용시험 기간 중 중대한 이상반응은 보고되지 않았다.
식약처 개별인정형 원료 등록 심사 신청… "절차에 따라 진행 중"
기운찬은 이번 인체적용시험 결과 등을 근거자료로 식품의약품안전처에 'GMK추출물'의 개별인정형 건강기능식품 기능성 원료 등록을 신청했으며, 관련 규정에 따른 심사가 진행 중이라고 밝혔다. 최종 인정 전까지 해당 소재는 건강기능식품의 기능성 원료로 표시·광고할 수 없으며, 회사 측은 향후 심사 절차와 결과에 따라 관련 사항을 순차적으로 안내할 계획이다.

기운찬은 GMK를 단순한 개별 원료가 아니라 버섯균사체 복합배양·발효기술을 기반으로 한 바이오소재 플랫폼으로 발전시키고 있다. 이를 바탕으로 인지기능 분야뿐 아니라 다양한 건강기능 분야에 대한 후속 연구와 인체적용시험을 지속하고, 새로운 곡물 배지와 복합배양 조건을 활용한 차세대 버섯균사체 소재 개발도 추진할 예정이다.
버섯균사체는 대규모 농경지나 장기간의 재배 과정에 의존하는 전통적인 작물 재배 방식과 달리, 곡물 배지와 온도·습도 등 배양 환경 제어를 통해 비교적 짧은 주기로 생산할 수 있어 자원 투입이 상대적으로 적은 지속가능한 바이오소재로 평가받는다고 회사 측은 설명했다.
